{"id":4724,"date":"2020-06-16T11:02:52","date_gmt":"2020-06-16T09:02:52","guid":{"rendered":"https:\/\/capitanalga.es\/project\/raie-avec-sauce-a-la-laitue-de-mer\/"},"modified":"2023-05-01T04:00:49","modified_gmt":"2023-05-01T02:00:49","slug":"raie-avec-sauce-a-la-laitue-de-mer","status":"publish","type":"project","link":"https:\/\/capitanalga.es\/fr\/project\/raie-avec-sauce-a-la-laitue-de-mer\/","title":{"rendered":"Raie avec sauce \u00e0 la laitue de mer"},"content":{"rendered":"<h2>Ingr\u00e9dients pour 4 personnes :<\/h2>\n<p style=\"padding-left: 40px; text-align: left;\">2 ailes de raie<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">30 g de <a href=\"https:\/\/capitanalga.es\/fr\/algas-2\/?product_tag_1=lechuga-de-mar\">laitue de mer<\/a><\/p>\n<p style=\"padding-left: 40px; text-align: left;\">Sel et poivre<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">Huile d&rsquo;olive<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">1 poivron vert<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">25 ml de cr\u00e8me<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">1 \u0153uf<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">50 g de moules<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">50 g de palourdes<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">Thym<\/p>\n<p style=\"padding-left: 40px; text-align: left;\">Cumin<\/p>\n<h2>Pr\u00e9paration :<\/h2>\n<ol>\n<li>Nous enlevons la peau de la raie, puis des longes.<\/li>\n<li>Lorsqu&rsquo;il est propre, coupez-le en morceaux.<\/li>\n<li>Mettre le fumet de poisson, le thym, le cumin, les moules et les palourdes dans une casserole. Faire cuire le tout pendant environ 20 minutes.<\/li>\n<li>Filtrer le bouillon et le r\u00e9server pour plus tard.<\/li>\n<li>Mettre l&rsquo;huile dans une casserole \u00e0 50-60\u00ba et introduire la peau pendant environ 10 minutes pour que le collag\u00e8ne se lib\u00e8re.<\/li>\n<li>Retirer la peau, la mettre dans un bol avec un peu de bouillon et la r\u00e9duire en pur\u00e9e.<\/li>\n<li>Transf\u00e9rer le bouillon dans une po\u00eale \u00e0 feu moyen, ajouter les morceaux de raie et laisser cuire pendant environ 4 minutes.<\/li>\n<li>Lorsque nous les sortons, nous les s\u00e9chons et les faisons frire dans une po\u00eale \u00e0 frire \u00e0 feu vif pour les saisir.<\/li>\n<li>Dans la m\u00eame po\u00eale, faire sauter la laitue de mer.<\/li>\n<li>Dans une autre po\u00eale, ajouter de l&rsquo;huile et faire revenir quelques poivrons verts.
